if you don't want to do an over night soak, you can put beans into a pot, cover generously with water, bring to rolling boil, then shut off and let soak for at least one hour: drain and then use as if you had done an overnight soak. I do this method a lot, and in fact just did it last week when making chili using pinto beans. Dee
