Cold Lasagna With Fish
8 lasagna noodles
8-1/2 ounces grated cheese
2 tablespoons lemon juice
3 tablespoons chopped herbs
2 9-ounce cans salmon
3 tablespoons mayonnaise
Cook lasagna noodles in salted water (6 parts water to 1 part noodles),
drain. Combine cheese, herbs, mayonnaise and lemon juice. Spread part of
this mixture over a lasagna noodle, top it with part of flaked salmon and
then with another lasagna noodle. Continue layering the ingredients in this
order. Last layer will be a lasagna noodle. Cover with plastic wrap and
refrigerate. Before serving, sprinkle the sides of lasagna with herbs and
spread some mayonnaise on top.
