FINNISH OVEN PANCAKE
4 eggs 1/4 c. sugar 1 tsp. salt 2 1/2 c. milk 1/2 c. flour
Place butter in 9-inch pie plate. Place pie plate in oven for 5 minutes.
(Allow butter
to coat bottom of pie plate.)
Mix eggs, sugar, salt and milk with flour. Pour mixture into prepared pie
plate.
DO NOT STIR. Bake 30 minutes, or until puffed and lightly browned. Serve
with fruit
sauce.
FRUIT SAUCE:
1 c. fresh or unsweetened frozen berries
1/4 c. unsweetened apple juice
1 1/2 tsp. cornstarch
Dash nutmeg, cinnamon, and-or ginger. Enjoy.
