Oven-Fried Chicken
Serves 4

Original Poster's Note: This is a really nice chicken. It gets nice 
and crisp. I used chicken breast instead of a whole chicken. I got 
this recipe from Pillsbury Best Chicken Cookbook.

1 cup mashed potato flakes
1 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon poultry seasoning
1 egg, slightly beaten
1 teaspoon lemon juice
3 pounds frying chicken, skin removed

Heat oven to 375°. In plastic bag, combine potato flakes, salt, 
pepper and poultry seasoning; shake to mix. In shallow bowl, combine 
egg and lemon juice. Dip chicken in egg mixture. Add to flour mixture 
in bag; shake to coat. Place chicken in ungreased 15x10 inch baking 
dish. Bake at 375° for 45 to 60 minutes, or until chicken is 
fork-tender and juices run clear.
