Candied Squash Rings Simple but delicious describes Candied Squash Rings. Acorn squash and an easy brown sugar-and-butter glaze are all you need for the conventional or microwave version of this recipe.
2 acorn squash Salt Pepper 1/2 cup packed brown sugar 1/4 cup butter or margarine 2 tablespoons water Cut squash crosswise into 1-inch slices; discard seeds. Arrange in single layer in shallow baking pan; season with salt and pepper. Cover and bake at 350° till almost tender, about 40 minutes. In saucepan combine brown sugar, butter, and water; cook and stir till bubbly. Spoon over squash. Continue baking, uncovered, till squash is tender, about 15 min utes more, basting often. Makes 4 to 6 servings. Microwave cooking directions: Pierce squash with metal skewer in several places. Cook in countertop microwave oven till soft, 8 to 10 minutes. Let stand 5 minutes. Cut cross wise into 1-inch slices; discard seeds. Place squash in 12x 7 1/2x2-inch nonmetal baking dish. Season with salt and pep per. In glass measuring cup combine remaining ingredients. Micro-cook 15 seconds. Spoon over squash. Cover with waxed paper. Micro-cook till hot, 3 to 5 minutes; baste once.
