hi Carla. i always deep freeze my bread. This way i can take out as much or as little as i need and the rest of the loaf or packet of buns will still last a long time. Also, as bread thaws so quickly you only need to take it out of the freezer a little while before you're about to use it. i know you said you didn't want to freeze your bread, but just thought i'd explain how it works for me anyway.
