Mom's Potato Wedges

6 medium potatoes, unpeeled, cut in wedges

Boil for 5 minutes in salted water, drain & pat dry.  Spread on lightly

greased baking sheet.

 

Sprinkle with:  3 tablespoons oil

                        Dash black pepper

                        1/2 teaspoon salt

                        1/2 teaspoon thyme

                        1/2 teaspoon oregano

                        Dash cayenne

 

Bake at 425 degrees for 15 minutes,  



Sprinkle with 1/3 cup Parmesan and 2 tablespoons grated Cheddar (and of

course, I use alot more than this!)  

 

Bake at 425 degrees for 10 to 12 minutes more.
