Mom's Prairie Pea Salad 

 

6 T. mayonnaise

 

1/4 c. lemon juice

 

1/2 c. minced green onions

 

2 c. frozen green peas, unthawed

 

1 c. cubed Cheddar cheese (4 oz.)

 

1/8 tsp. salt

 

1/8 tsp. pepper

 

2 c. lettuce, torn into bite -size pieces

 

8 slices bacon, cooked, crumbled 

 

One day before serving, combine all ingredients except lettuce and bacon in a 
medium bowl. Cover well and refrigerate. 

 

Just before serving, add lettuce and bacon; toss well.  Makes 6 servings, about 
240 calories each.
