Peach Crisp #1

 

Serves 6-8

 

For the Filling:

 

8-10 peaches, sliced not too thin

1/2 cup sugar

1 tablespoon lemon juice

1-1/2 tablespoons all-purpose flour

 

For the Topping:

 

1/2 cup brown sugar

1/4 cup unsalted butter, softened

1/2 cup flour

1/2 teaspoon cinnamon or to taste

 

Method:

 

1. Preheat oven to 400 degrees.

2. Butter or spray an 8x8-inch baking dish.

3. Combine peaches, sugar, lemon juice and flour in bowl.

4. Blend well.

5. Transfer to baking dish.

6. Combine the crumb topping ingredients in small bowl.

7. Mix with hands until lumps form.

8. Sprinkle in crumbs over peaches.

9. Bake for 30 minutes, or until bubbly and brown on top.

10. Serve warm or at room temperature.

 

Note:

 

1. Recipe can be doubled and placed in 13x9x2-inch baking dish.

2. For a thinner crisp, use less peaches.
