Most cookies should be baked at either 350 degrees or 375 degrees. There are only a few I've seen that require 400. For my oven, 10 to 12 minutes for most cookies works well. 10 minutes is not quite enough, so I end up going 12 minutes. Some cookies require about 7 minutes. You should not feel any doughy texture remaining on the cookie. If you are not certain, take a toothpick and insert it in the center, then check it to see if dough clings to it. If there are only crumbs on it, then the cookie is done. Most often, people use the toothpick method for cakes, but it works with cookies as well. hth
