Apple Cake

 

2 cups sugar

3 eggs

1 1/4 cups vegetable oil

1 tsp vanilla extract

3 cups flour

1 tsp salt

1 tsp baking soda

1 tsp cinnamon

3 cups diced Granny Smith apples, peeled

1/2 cup chopped black walnuts

 

Method

 

1. Preheat oven to 325 degrees.

2. Grease and flour a tube pan.

3. Whisk dry ingredients together and set aside.

4. Beat together in a large bowl the sugar, eggs, oil and vanilla until well 
blended.

5. Add the dry ingredients and blend just until combined.

6. Stir in the chopped apples and nuts.

7. (You're thinking at this point that this will never 'fly' as it looks like a 

gluey goppy mess).

8. Put into prepared pan and bake up to 1 1/2 hours until it tests done (start 
checking at just over 1 hour as ovens vary greatly.) 

9. Cool in pan 10 minutes before turning onto a rack to cool.

10. Because of the low oven temperature, this develops an almost 'crisp' crust 
which may crack a wee bit.

11. Makes 12 servings.
