Break the stalks away from the bottom (if you buy celery that's all stuck together at the base) and break it in half slowly. There will be stringy pieces that you can pull all the way to the end and throw them away. I like to cut the celery lengthwise to make thinner pieces, and then cut them crosswise then to chop them. I don't like big chunks of celery in my soup in case there are still some stringy parts left, so I chop mine pretty small. the flavor is the same.
