The strings make it hard to use a food processor.  A sharp knife or 
something like a mandolin slicer works well.  The knife method takes a 
little practice.  Use a cutting board.  Hold one stalk at a time firmly with 
your left hand and slice with a serrated short knife with the other.  It's 
the reverse if you're left-handed.
If you have left over celery, and I almost always do, you can throw it in a 
juicer.  Add carrot juice if you like.
