Hi Claudia,
Celery comes in two or three different ways: a bunch of long stalks, celery 
hearts, the inside stalks, more tender than the larger bunch, or sometimes cut 
in stick and packed in water.  I would avoid this last one, as it doesn't keep 
as well.  I usually trim off the bottom of the bunch, enabling easier 
separation of the stalks.  Trim the top end of leaves as well.  You can use the 
leaves to flavor soups and stews or broth.
Store wrapped in a paper towel in a plastic bag.  Hope this helps.
