Shepherd Pie

 

1 lb ground beef

1/2 cup chopped onion

1/2 cup chopped celery

1, 10 & 1/2 oz can vegetable soup

1/2 to 1 tsp whole thyme

3 cups mashed potatoes

1 cup, 4 oz, shredded cheddar cheese

Cook ground beef, onion and celery until meat is browned.  Drain off drippings; 
stir in soup and thyme.  Spoon meat mixture into a lightly greased shallow 2 
quart casserole dish.  Spread potatoes evenly over meat mixture.  Bake at 350 
degree for 20 minutes.  Remove from oven and sprinkle with cheese; return to 
oven until cheese is melted. Yield: 6 servings.
