Buy a large net bag with draw strings in which meat is placed before meat and net go into the pan. A wooden stick run through both draw string loops that has been soaked in water can be laid over the top of the roasting pan so finding draw strings will be easier when it's time to remove meat. These would be heavier than cheese cloth but work on the same principle and would likely be made of 100% cotton or linen or flax with no chemically produced components in them. If meat is coming out in hunks, I'd say you're not allowing the meat enough time to rest before removing it. Remember large meat continues cooking even after the oven is turned off and the oven door is opened.
