Great American Recipes Great Ways With Ground Meats Pinwheel Meat Loaf 1 1/2 pounds lean ground beef 1/2 cup fine dry bread crumbs 1 egg, beaten 1 1/4 teaspoons salt, divided 1/8 teaspoon pepper 1 package (10 ounces) frozen chopped spinach, defrosted, well drained 3/4 cup shredded Mozzarella cheese, divided 3 tablespoons grated Parmesan cheese 1/2 teaspoon dried oregano or marjoram or rosemary leaves 1 clove garlic, minced 1/2 cup ketchup, divided Chopped parsley Combine ground beef, bread crumbs, egg, 1 teaspoon salt, pepper and 2 tablespoons ketchup, mix lightly. Combine spinach, 1/2 cup Mozzarella cheese, Parmesan cheese, herb, remaining 1/4 teaspoon salt and the garlic. Pat out meat mixture to a 14 by 18 inch rectangle on waxed paper. Spread spinach filling over beef to 3/4 inch from edges. Roll up from short end, jelly roll fashion, to enclose filling and to form a pinwheel loaf. Press beef mixture around filling at both ends. Place loaf, seam side down, on rack in roasting pan. Bake at 350 degrees for 1 hour. Spread remaining 2 tablespoons ketchup over meat. Bake 15 minutes longer. Sprinkle with remaining Mozzarella cheese and parsley. Serve hot or chill and serve cold. Variation: Sliced cooked carrots or green peas can be used as filling for meat loaf, in place of spinach. Combine spinach, 1/2 cup Mozzarella cheese, Parmesan cheese, herb, remaining salt and the garlic. Pat out beef mixture on waxed paper to 14 by 9 inch rectangle. Spread spinach filling on meat to 3/4 inch from edges. Roll up from short end to form pinwheel loaf. Pinch ends together to seal well. Place in a 9x5 inch microsafe dish, pressing to fit in loaf shape. Cover with waxed paper. Microwave on high for 5 minutes. Pour off juices. Cover. Microwave on medium-high for 20 minutes. Give dish a half turn after 10 minutes. Spread with remaining ketchup. Sprinkle with remaining mozzarella cheese. Cover with aluminum foil, and let stand 10 minutes. Sprinkle with chopped parsley. Serve hot or cold. Makes 4 servings.
