I've only made these a couple of times, but they are delicious. You can also make them and bake them unfilled. My mom and I did that once and put frosting and sprinkles on them.

Filled sugar cookies
¾ cups sifted all-purpose flour
2 tsp. baking powder
¼ tsp. salt
¾ cup butter or margarine
1 cup sugar
2 eggs
1 tsp. vanilla
Sift flour with baking powder and salt. Cream butter in mixing bowl. Gradually add sugar and continue beating until light and fluffy. Add eggs and vanilla. Beat well. Blend in sifted dry ingredients. Chill 1-1/2 to 2 hours. Prepare filling. Roll out dough one third at a time on floured surface to 1/8 inch thickness. Cut into 2-1/2 inch rounds. Place half of rounds on ungreased cookie sheet. Place 1 tsp. filling in center of each round and top with another round. Press edges together to seal. Prick top with fork. Bake for 8 to 10 minutes at 375 or until light brown. * For filling, you can use jarred mincemeat or jams/preserves.
The author of this recipe suggests peach or cherry jams.
