Remember, though, that coconut milk is a high fat liquid, and can cause
weight gain and other problems for those who didn't come from aculture where
it was a dietary staple.

When making curry for others I use a banana to remove some of the harshness,
a trick I learned from a friend who studied at a culinary institute in
India.

Hi all

Thanks for all of those people who responded to my email.

It seems like a few people sub sugar with honey or maple syrup 
unfortunately
I can't stand them, I usually go without sugar in nearly 
everything but
sometimes I like something sweet.

I have never used coconut oil for cooking but I much prefer 
peanut oil as it
cooks at a higher level without the oil burning, it smokes a lot 
but it
never has that burnt taste.

Another thing I like to do is after boiling rice I will pour 
coconut milk in
the rice after draining the water and let the coconut milk warm 
up.
