Take any chili recipe you can find and that meets your taste requirements and replace the meat with cauliflower cut into small chunks or broccoli, again in smaller but not tiny florets, or a combination of both. They'll provide the proper level of chunk to the chili without the meat.
You may also have a bit of difficulty in getting the consistency right, so having some corn starch or arrow root on hand can also help with this, or if you're so inclined use a bit of corn meal.
