It would be better to defrost the meat in a microwave 
You could also put the meat in a plastic bag, then put it in a pan of hot
water.  You change the water about every fifteen minutes as the meat thaws.
I've never tried thawing meat in a crockpot.  It would probably take longer
than you'd be willing to wait for dinner.
