I thought celery culd be frozen if only to use like for stews, sauces, but
not in salads, or like with peanut butter on top; in other words, only for
cooking!

You're right on the celery and I feel the same way you do about 
ending up wasting some.  I've found that if you cut off the tops 
of each stalk and a couple of inches at the bottom of each stalk 
and then wrap them in foil, the celery keeps for several weeks.  
I can usually use it by then.
