AMAZING COCONUT PIE

Heat oven to 350 degrees.

Combine in electric blender - on low speed - for 3 minutes.
4 eggs
2 c. milk
3/4 c. sugar
1/4 c. margarine
1/2 c. Bisquick
1 1/2 tsp. vanilla (if using real vanilla, cut that amount in half)

Pour into GREASED 9" pie pan.
LET STAND 5 minutes.

Sprinkle 1 c. coconut into mixture.

Bake for 40 minutes.

Pan Shortcake
2-1/3 cups Bisquick
3 Tbs. sugar
3 Tbs. butter, melted
1/2 cup milk.

Preheat oven to 425 degrees F.  Mix all ingredients with fork to a
soft dough.  Pat dough into ungreased round layer cake pan, 8 in. by
1/2 in. Bake 15-20 minutes.  While warm, cut shortcake as you would a
pie.  Split and top with fruit.
