Chicken and noodles
In a hot large frying pan. add some olive oil. Slice up a medium onion, Red
and green sweet pepper and thro in skillet. Add a little salt/black pepper,
red hot crushed pepper, oregano and some dried basil. soften them up a bit
and add as much fresh garlic as you like. I used 2 large cloves. Cut up 4
chicken thighs and add to skillet. Drain one 14 ounce can of whole or
stewed tomatoes and put the tomatoes over the top and cover with a lid. Let
cook 45 minutes or until chicken is done on low medium simmer. Use the pasta
you like. Tonight I use egg noodles. Cook pasta to directions and reduce by
one minute. Drain pasta and add to skillet. Cover and let flavors marinate
for a few minutes after mixing vegetables and noodle together. Serve with
some good Italian grated hard cheese and hot crush pepper and enjoy. Will
add a few peas when I make it the next time.
