We call your style of cooking Country Cooking around here. My step-grandmother uses it, and as a result I have four versions of the same recipe from her. I've found it's a style practiced by folks who love to cook and who have a flair for improvisationary cooking and an instinct for ingredient amounts. I use a bit more measured approach, though I rarely make a recipe strictly by the instructions -- I substitute, add enhancements, and remove things as my needs suit. But there are folks who work strictly from a recipe, never varying. All styles are equally valid -- as long as food comes out of the process that humans (or other target creatures) can eat it's all good.
