Hi. Try this method. Before you put your pan that you're going to use for
the water bath in the oven, find out how many cups of water it holds. Just
pour water into the pan one cup at a time till it's filled. Then, pour out
that water. Now that you know how many cups it will hold, divide it by
half; remember, though, that the cheesecake itself will displace some of
that water so I usually subtract another half cup or so. Then, put your pan
on the oven rack and pour in the boiling water. Lastly, place your pan into
the bath. Close the door on that hot oven and set your timer. Hope this

I've been thinking of making a pumpkin cheesecake, and my sister told
me how it's done. Specifically, how to make the water bath.
Apparently, I have to pour boiling water until it's halfway up the
pan. The problems with that are that (A) it's boiling and so any spill
will be bad news, (B) I am advised to do this in the oven, which is
not a good place to work anyway, (C) it is boiling and *in* the oven,
so I have no way of knowing when it reaches the right level, and (D)
it's *boiling* water I have to pour *in the oven*. How do you all
manage this one? Thanks.
