In my experience, giving it the old sniff test can also work. In my experience, cheese that has gone bad will smell pretty bad. When I'm alone and I need to know if I can use my bag of grated cheese or not, I open it and give it a good sniff. If it smells like cheese then I'll use it but if it takes on a kind of sour or moldy smell then I'll throw it out. It's really difficult to describe what moldy cheese smells like but you'll know it when you smell it.

When shredded cheese goes moldy it tends to fuse together again. Most cheese
is sold using sell by dates instead of expiration dates, and if it hasn't
been opened it should be fine anyway.
