Would it help to freeze one of the few bags for later use? This is a good tip! So, if you do not feel like individual pieces of shredded cheese, and it is all blobbed together, more than likely, it is! Moldy!!! I always thought the air cheese is exposed to causes mold, but how can this happen to a perfectly sealed package? Also, once one opens a package of grated cheese, approximately how long would you say it would be safe to use it? I recently bought a package of these string cheese pieces, each individually wrapped, and 2 out of the 12 pieces were moldy! My older son, sighted, discovered it.
