Would it help to freeze one of the few bags for later use? This is a good
tip! So, if you do not feel like individual pieces of shredded cheese, and
it is all blobbed together, more than likely, it is! Moldy!!!
I always thought the air cheese is exposed to causes mold, but how can this
happen to a perfectly sealed package? Also, once one opens a package of
grated cheese, approximately how long would you say it would be safe to use
it?
I recently bought a package of these string cheese pieces, each individually
wrapped, and 2 out of the 12 pieces were moldy! My older son, sighted,
discovered it.

When shredded cheese goes moldy it tends to fuse together again. Most cheese
is sold using sell by dates instead of expiration dates, and if it hasn't
been opened it should be fine anyway.
