Here is a simple one.
1 pie shell. I use the one from the store.
Fry up a red sweet pepper, and medium onion and 1 pound of bulk sausage of your choice. Mix 6 eggs in a bowl and add the above. Add salt and black pepper to taste and add a couple hand full of shredded cheese. I use cheddar. Now mix well and pour into the pie shell and bake at 350 degree F for 52 minutes more or less. In my oven it take 52 minutes. What you are looking for, is the center of the egg pie is almost set up and firm. Take out of oven and let sit for about 15 minutes. This is good hot or cold.
