I use a lot of ground chicken and turkey in place of beef. The ground
chicken runs $2.99 a pound at the store. This week they had chicken thigh on
sale for $89 a pound and I bought 22 pounds. It took me about 20 minutes to
de-bone and de-shin the thighs. Place them in the freezer for about a hour
and got out my meat grinder and in about 15 minutes I had a round 20 pound
of ground chicken or a saving of $40. Now went I start to use the ground
chicken, for each pound, I will mix in 1 tablespoon of olive oil for keeping
the meat moist. The great part I have 8 pints of chicken broth in the
freezer by cooking down the bones.
