Today was Turkey bean burgers with fried sweet potatoes.
for the Burger
1/2 pound of ground turkey
1/2 c of bean soup
some minced onion
Mix well
If to moist, add a few bread crumbs
Which I didn't.
Now that everything is mix well
Make two large patties.
Add just enough olive oil to coat the skillet. I use a cast iron skillet
when doing this.
turn the heat to a medium heat and set the timer for 7 minutes
Put in the burgers and cover with a lid. After a minute lift the burgers so
they won't stick. Do not flip.
Cover with lid. When the timer rings, flip the burgers and salt and pepper
them.
Place the lid back on the skillet.
set the timer for 8 minutes. The last minute and a half, add a slice of
cheese of your choice on top of burgers and cover with the lid. When timer
rigs, place burgers on a thin bagel with a slice of a sweet onion and serve
hot.
For the sweet potato.
My way
Slice a sweet potato into French fries. (about the size of what you get at a
fast food restaurant.
Now get out your none stick skillet and coat the skillet with olive oil,
Just enough to coat the bottom of the skillet.
Add the French fries sweet potatoes and cover skillet. From time to time,
flip the potatoes. It takes about fifteen minutes for sweet potatoes to be
done as I like them on a medium heat.
