I use a very Sharpe chef knife. If the sweet potato is large enough in its diameter, Peel the potato and cut crosswise, and cut the slices into fries. If not, than you have to cut the potato lengthwise the thickness you want and than do the same as before, cut the slices into fries. Today, the potato were cut lengthwise.

My way
Slice a sweet potato into French fries. (about the size of what you get at a fast food restaurant. Now get out your none stick skillet and coat the skillet with olive oil, Just enough to coat the bottom of the skillet. Add the French fries sweet potatoes and cover skillet. From time to time, flip the potatoes. It takes about fifteen minutes for sweet potatoes to be done as I like them on a medium heat.
