When baking, try to use the middle of the oven: a rack placed in the middle
and place the dish as centered as you can. You can adjust the rack buy
counting the slots on the sides or get sighted help if you've never done
this before and memorize where the rack should be placed for baking. It
doesn't have to exact for the dish, but try to center between both sides and
front an back as best you can. Cooking on multiple racks is tricky and if
you need to do this, rotate your pans so the one on the upper rack gets
placed on the lower rack for more even cooking. I have a big family, so
sometimes this is necessary for me, but don't worry if you can use one rack.
Centering it is the best strategy if you will be mostly cooking in small
quantities.

Hello,
I was wondering which rack to use in the oven when baking?  I was baking
some Ginger bread and one minute it was not done and the next few minutes it
seemed like it had cooked to long and had a burnt smell to it.  I was told
that part of my problem was that I had it to close to the burner I was
cooking it on the bottom rack.  I was told to use a higher rack.  I was
wondering about other peoples experience on the list.
