Hi Sherri,
Here's my Grandmother's recipe for Sweet Potato Pie. This recipe makes
a lot of filling -- easily enough for 2 9-inch pies or a 10-inch pie
plus a couple of custard cups filled with the delicious filling (and
served for a snack or breakfast!) Of, you can use 2 cups of milk
instead of 3, which may still give you a little more than you will
need for a 9-inch pie).

Make your favorite pie crust. Bake it. Set aside while you make the filling.
Combine with mixer:
1-to-2 cooked sweet potatoes, mashed
3 eggs
3/4 cup sugar
1/4 tsp. salt
2 tsp. cinnamon
1/2 tsp. nutmeg
Ground Alspice to taste
2 TBSP. cornstarch
1 TBSP. vanilla extract.

Stir in 3 cups whole milk.

Pour into baked pie crusts.

Bake at 425 degrees for 12 minutes. Reduce heat to 350 degrees  and
continue baking for 30-40 minutes longer, until knife inserted near
center  comes out clean.
