I have started putting a tiny bit of water in the skillet which helps to keep the whites not crispy. I put my hand under the faucet and then waive my hand over the skillet. Repeat one or two more times. I don't like crispy whites.

Crack eggs into it. Sprinkle with salt, pepper, onion powder, whatever you like. Cover. Turn fire to medium, and start your bread to toasting in the toaster. When the eggs start to sizzle, let them cook for about thirty seconds longer. Turn off the heat and keep them covered while you deal with buttering your toast. If you are a slow butterer, then remove the lid from the eggs after about thirty or forty seconds; otherwise, the yolks will become too hard. Experiment with the timing. One time, I took the lid off too soon, and found that the whites hadn't set. Yuck! Another time or two, I didn't take it off soon enough, and the yolks were quite hard. hth Jennifer On 11/16/15, Vicki via Cookinginthedark <[email protected]> wrote: > I will have to remember that.
