Hello, one thing I do if I am making an omelet is I use an omelet pan I had purchased years ago. It is a small skillet that has a hinge in the middle of it and you put your egg mixture divided into both sides of the pan. I will put the vegetables in one side of the pan after the egg has firmed up some and let them cook and then flip the other side of the skillet on top of the other side and there you go.
