If you are making mac and cheese from real ingredients such as milk,
butter etc. you can always add spices such as black pepper, red pepper
flakes or more herbs such as basil to give it a more italian flavor. You
can do this even with the stuff from the box.
You can add mushrooms, dried or sauteed onions or bell peppers or any
cooked vegie such as sliced almost anything such as summer squash. You can
cutthe spam up and fry it and add it to the mac and cheese. You can use
ham instead of spam or tuna or hot dogs or any other fish or meat.You own
mind and lardor are your boundaries.
