I made these for dinner along with another loaf of the Shiner Beer Bread!

A great combination.

Theresa,

I make what I call Eileen’s Turkey Croquettes using ground turkey meat. They
are quite good.

Here is my recipe and what I do and they are very good, but they are heavy in
carbs if you care about that.

Eileen’s Turkey Croquettes

Ingredients:
2 Lbs. Butter Ball lean ground turkey meat (usually 2 packages of the meat;
each having 1 lb.).
1 14 Oz can chicken broth.
1 large pouch instant brown rice Success or Minute Rice brands).
1-1/2 stacks whole wheat Ritz crackers (crushed).
1 small can4-8 Oz can sliced mushrooms, drained.
1/3 cup grated Romano Parmesan.
2 Tbs dried minced Onion.
1 tsp ground Black Pepper.
2-3 Tbs Ketchup (optional).

Directions:
Preheat oven to 400 degrees. Grease a no-stick baking sheet (these things
really stick to the pan after cooking) set aside.

In a large microwave safe container or bowl pour in the chicken broth. Empty in
the contents of the brown rice packet and cook for 6 minutes. Let sit to cool
for 3-5 minutes. You will need to remove this container from the microwave with
oven-safe gloves.

Add 1.5 stacks of crushed ritz Crackers into the rice and soup mixture. Add the
minced onion & black pepper. Stir to mix.
Drain all liquid from the can of sliced mushrooms and add them to the mixture.
Stir to mix.

Add in the 2 Lbs of ground turkey, crumbeling it as you add it in. Add the 1/3 Cp
of parmesan cheese and mix well. If the mixture is too wet you can try adding in
the remaining 1/2 stack of the crackers &/or add a bit more of the grated
cheese. Additionally you can add ketchup in small quantities to give a little tangy
taste.

I make my patties large so get somewhere between 7-8 patties out of 2 Lbs of
meat. Sometimes I try to cut down on the crackers by only adding 1-1/2 stacks
instead of the full 2 stacks. They are heavy so I like to have a green veggie
to go with them.

Bake at 400 degrees 50 minutes. Remove from oven and let cool down. Use a
spatchula to help get them off the baking sheet.

HTH.

Eileen
