I don't have a meat thermometer, or any cooking thermometer for that matter. I judge doneness of meat by time, by smell, and by touch. When I cook 4 chicken legs for an hour at 350 degrees, there is no chance the chicken will be undercooked even if I don't know what the internal temperature is.

Also check your thermometer for accuracy, and if it fails the test, discard it and replace it. Food borne illnesses are serious.
