It seems that most people who used Ubuntu with gnome desktop for years
dislike the Unity (myself included on both counts). Not so much the new
users, who need to learn new trick anyway.

It is quite obvious to me that Unity is an attempt to position Ubuntu
for the tablet/smartphone market. Of course, this is not likely to be a
good fit for a dual monitor crystallography workstation. To be fair,
Ubuntu is owned by Canonical, and Shuttleworth can do whatever he wants
with it, while individual users seem to be provided with
gnome-session-fallback package.
I was under impression that certain elements of Unity desktop make it
look more like OSX. Given the axiom that OSX is the best desktop in the
universe, how could that be a bad thing? ;-)

Or reconfigure Ubuntu to fit your needs. That is what's great about
Linux - you are not really locked into the vendor's solution.
