Had you installed via the Courier source code or an rpm (Red Hat Linux 
and derivatives) made from it, it would be in /usr/lib/courier-imap/etc 
and the imapd and imapd-ssl files there. However, with McIntosh in the 
picture, all bets are off.

The documentation included with the Courier source code is perfectly 
adequate for all normally gifted humans. However, with McIntosh in the 
picture, all bets are off.
