Think I found the right file then in /etc/courier/imapd:

##VERSION: $Id: imapd.dist.in,v 1.41 2008/06/21 16:01:23 mrsam Exp $

# imapd created from imapd.dist by sysconftool

I added this at the bottom

# MAILDIRPATH - directory name of the maildir directory.
#
MAILDIRPATH=Maildir

IMAPDEBUGFILE=debug.txt

and stopped and started courier-imapd.
