sounds more to me like you haven't gone through and set up sendmail
properly.  The conf file (senmail.cf?) has an option set by default to only
pass mail to users logged in locally; you change the line to allow network
connections, thus making it a mailserver. 7.1 doesn't have firewalling
enabled by default (it does load ipchains, but with a default ALLOW ALL
ruleset) 7.2 gives the option to enable fw'ing during install.
If you're installing courier, you're going to be reading all the
documentation (right?  RIGHT??) and it will give you what you need to know
on how to configure it to allow network users to login.
