I'd agree with your views on the documentation. However, being a developer of an open-source project myself, I can say that good documentation help is hard to find.
I'm currently going through the learning pains of installing courier...some of the pains are self-inflicted but as you mentioned the documentation lacks in some places and needs to be expanded in others. While how-to's are great and should be written whenever possible, I'd say another good to thing to do is take the area(s) of the documentation that you had trouble with and make the modifications and submit them to the courier development team for consideration. This is better-served than a how-to because then it is in the actual project documentation (excuse me if you already did this) Is the how-to you metioned on the web?
