Personally, I *also* found it a little bit difficult to locate the what I wanted in the documentation.
I found the best documentation at: http://www.courier-mta.org/
I should point out that most of the documentation there consists of HTML versions of the man pages. Both the man pages, and the HTML, is generated from the same original Docbook source.
