Doh!  Correct.  I had everything set except the "Maildir" directory
(quite literally).  I had the LDAP_MAILDIR parameter set to
/u2/mail/courier, and even had a maildir inside of that named <user>. 
The missing piece was to remove the <user> maildir, create a regular
directory of name <user> (courier user's home directory is
/u2/mail/courier, so the directory is /u2/mail/courier/<user>) and
create a maildir directory named "Maildir" inside that
(/u2/mail/courier/<user>/Maildir).

Thanks for your patient assistance.  My POP server is working and
authenticating via LDAP.  Now all I have left is to tie Postfix into it
as the SMTP server and I'm off and running.
