I have connection information being logged to /var/log/maillog every
minute for every user on the system. I was wondering if this could be
redirected to another file, or suppressed using a different log level.Â

All logging messages are sent to your system syslog facility, and your syslog daemon is the one that figures out where the logging messages are saved.

Your syslog daemon may or may not have the ability to redirect logging
messages from a single application only to a separate file.  Consult your
syslog daemon's manual page for more information.
