I’m running a Gentoo box, with the Courier portage package.  The default /etc/courier/bofh file has the following relevant lines:

Courier does not install the bofh configuration file by default. This must be a Gentoo-specific customization in the Gentoo package.

opt BOFHSPFTRUSTME=1
opt BOFHSPFHELO=pass,neutral,unknown,none,error,softfail,fail

opt BOFHSPFFROM=all

opt BOFHSPFMAILFROM=all

As I understand it, this basically allows unfiltered email to make it’s way to our mail server.

Correct. The above settings record the SPF status in each message's header, but otherwise take no action.

I’d like to enable SPF to prevent domain spoofing (and just plain junk mail).  Could someone please explain the keywords a little better?

See the courier man page for a detailed explanation of these, and several other SPF settings.
