Well, where exactly do you expect to find a $HOME/Maildir, in that case. After all, that's where you'll find your mailbox, in a real account. So, that's exactly where you'd logically find it in a virtual account, then.

Well, if you don't have accounts with maildirs, you would have no use for an IMAP server in the first place.
Maildirs, as originally implemented in Qmail, lived in $HOME/Maildir. I guess that Postfix aped the overall structure of a maildir, but for some reason yanked all the maildirs out of an account's home directory – either that or Postfix's instructions are not clear that this is where you should put the maildirs.
Courier-IMAP follows the original model, of maildirs located in $HOME/Maildir. So, for a given account in userdb, it's home directory setting is expected to be a real directory, and $HOME/Maildir would be the default maildir location.
It's recommended that you do not explicitly specify each account's maildir, in userdb, but rather the home directory and let each one's fake- $HOME/Maildir be the mailbox. This would allow you to easily install maildrop later on, to handle mail delivery to the account, with maildrop expecting to find the mail filter file in the fake-$HOME/.mailfilter.
If you use virtual accounts that share the same userid and groupid, you can specify each individual account's maildir, and have an empty directory somewhere, that's set as each account's home directory, for the purpose of a virtual login. But, you won't be able to install maildrop later on.
