Thank you for the responses. I am a little confused though, as it has
not been clearly explained to me /why/ Courier-IMAP needs the HOME
directory. Does Courier-IMAP require that the the maildir be /inside/
the home directory? If so, why? (Or is it purely tradition?)

My "virtual" mail directories are stored at
/var/mail/vhosts/<domainname>/<users>, but they are /all/ using the
MAILDIR format.

But perhaps this is a more expedient question: For each user, the userdb
database stores two properties: a "home" property (path to the HOME
directory) and a "mail" property (the path to the mail). Does
Courier-IMAP even use the "mail" path provided here? Or does it just
take the "home" directory path and attach "Maildir" to it?
